Homemade black pudding with roasted Orkney scallop, pickled turnip, roasted apple & red wine jus.

Late October we received a Mangalitza pig from @penlanheritagebreeds, and we made full use of the whole animal. Here, the blood and belly come together—using our own homemade pancetta for its fat and to add a little more texture to create our black pudding.

Mangalitza pigs are a rare, woolly lard breed, originally developed in the Austro-Hungarian Empire for the richly flavoured meat prized by the Habsburgs. Penlan’s hilltop farm in Carmarthenshire is home to the purest Mangalitza herd in the UK.

We honour that heritage by using the animal with care and purpose—and this black pudding is one expression of that.
